Chocolate Muffins
2 1/2 cups self-raising flour
1/3 cup cocoa powder
2/3 cup caster sugar
1 cup choc bits
1 cup buttermilk
2 eggs
150g melted butter
Preheat oven to 200C/400F/ and grease the muffin trays. Sift flour & cocoa powder into a large bowl, then stir in caster sugar and choc bits. Make a well in the centre.
Place the buttermilk, 2 eggs and butter in a large jug, mix and pour into the well. Fold gently until just combined - the batter should be lumpy. Divide the mixture among the muffin holes.
Bake for 20-25 minutes (regular size) or 10-15 minutes (mini muffins), or until the muffins come away from the side of the tin. Cool for 5 minutes, then lift out onto a wire rack.
Stuffed Chicken Breasts
4 small or 2 large boneless, skinless chicken breasts
8 thin slices prosciutto
8 leaves sage
4 tabs flour
Salt and pepper
Olive oil
1/3 c dry white wine
Cut breasts into 4 similar pieces, cut a pocket into chicken, being careful not to slice through.
Stuff with prosciutto and sage leaves. Salt and pepper liberally, dust with flour and then brown on all sides in a hot saute pan with olive oil.
While sauteing, heat oven to 350. Once seared on all sides, deglaze pan with wine, then place entire pan in oven to finish (10-15 minutes, test for doneness). Serve right away
Green Beans with olive oil
500 gr' green beans (frozen)
6 cloves of garlic
2 tabs tomato paste
1 tomato (pealed and cubed)
1/3 cup olive oil
salt to taste
chopped corinader (or parsley)
Rinse beans and put in a large pot of boiling salted water. Cover, reduce heat to moderate and cook for 5 minutes. Drain off all but 1/2 cup of the cooking liquid, and add the remaining ingredients except for the corinader.
Blend gently and cook for 15 minutes. Add the corinader and mix well.
Taste and adjust seasoning. The sauce should be thick and each bean glistening and coated.
Serve chilled or at room temperature.
